Head chef and leaseholder Danny Smith, who is from Pembrokeshire in Wales, decided to open this bar due to his love of burgers – he once travelled for an hour and a half to Hereford just to try one.

Danny – who before moving to the area spent four years running the Cambrian Inn, Abergavenny – has lived in Stroud for the last two years.

The opportunity to run Bisley House – which hadn’t been used since the end of 2020 – came while Danny was a manager at the Fat Toni’s pizzeria in Merrywalks.

Danny has given the establishment a fresh look by sanding tables, painting and changing some of the furniture.

Stroud News and Journal:

He is very pleased with the revamp and how business has gone since the opening at the end of last month.

Head chef’s reaction

He said: “My previous pub was such a success I thought I would try this out.

“So far all of the staff are loving it.

“I’m loving it.

“A lot of the locals are so glad to see this place reopen.

“The garden, in particular, gets really full.

“I just felt that this was a great opportunity.

“Opening a new business can be scary but all of the hard work has paid off.

“I am the head chef but I am also training up young chefs at the same time.

“We are launching a new burger for Father’s Day – it will be called the big buwch, which means cow in Welsh.

“A lot of the meat comes mainly from Waghornes in the Five Valleys Shopping Centre.

“I think it’s going really well.

“Last week a lot of people came from Gloucester, so the word is clearly getting out.”
